Bread – Wholewheat Banana Bread

Method

  1. Preheat oven to 165C and grease a 9x5in loaf tin
  2. Beat oil and honey/syrup together. Add eggs and beat well.
  3. Whisk in mashed bananas and milk. If the coconut oil solidifies on contact with cold ingredients, heat in microwave for about 10seconds.
  4. Add bicarbonate, vanilla, salt, and cinnamon. Whisk to blend.
  5. Switch to a big spoon and stir in flour, until just combined. Some lumps are ok. Add mix-ins if desired.
  6. Pour the batter into greased loaf pan
  7. Bake for 55-60 minutes, or until a toothpick into the centre comes out clean.

Let cool in the loaf pan for about 10min, then transfer to a wire rack for 20min before slicing.
