Bread – Wholewheat Banana Bread
Ingredients
- 1⁄3 cup melted coconut oil or extra-virgin olive oil
- 1⁄2 cup maple syrup
- 2 eggs
- 1 cup mashed ripe bananas (2-3 bananas)
- 1⁄4 cup milk or water
- 1 tsp bicarbonate of soda
- 1 tsp vanilla extract
- 1⁄2 tsp salt
- 1⁄2 tsp ground cinnamon
- 1 3⁄4 whole wheat flour
- 1⁄2 cup mix-ins (nuts like walnut or pecan, choc chip, dried fruit)
Method
- Preheat oven to 165C and grease a 9x5in loaf tin
- Beat oil and honey/syrup together. Add eggs and beat well.
- Whisk in mashed bananas and milk. If the coconut oil solidifies on contact with cold ingredients, heat in microwave for about 10seconds.
- Add bicarbonate, vanilla, salt, and cinnamon. Whisk to blend.
- Switch to a big spoon and stir in flour, until just combined. Some lumps are ok. Add mix-ins if desired.
- Pour the batter into greased loaf pan
- Bake for 55-60 minutes, or until a toothpick into the centre comes out clean.
Let cool in the loaf pan for about 10min, then transfer to a wire rack for 20min before slicing.
