Lentil Daal (Thai Style)
Ingredients
- 2 tbsp coconut oil (if none, sub with coconut milk)
- 1 small green chilli
- 1 tbsp minced fresh ginger
- 1 medium shallot
- 4 cloves garlic
- 4 tbsp green curry paste - If using my large amazon tub, try 2 scoops. It\s a very strong paste, with little oil/fluid.
- 2 1⁄4 cups light coconut milk
- 1 tsp turmeric
- 1 tsp curry powder
- 1 pinch sea salt & black pepper
- 1 cup lentils
- 1 tsp soy sauce
- 1-2 tbsp maple syrup
- 2 tbsp fresh lemon juice
- 1 pinch cayenne pepper
Method
- Heat a large pot over a medium heat. Add coconut oil, chilli, ginger, shallot, and garlic. Saute for 3-4 minutes, stirring occasionally
- Add curry paste and stir to coat. Saute another 2-3 min
- Add coconut milk, turmeric, curry powder, salt, and pepper. Stir to combine
- Bring to a simmer. Add lentils, soy, and syrup.
- Once lentils are tender, taste and adjust flavour as needed (lemon juice for acidity, cayenne for heat, curry powder/paste for curry flavour, salt, syrup…)
