Lentil Daal (Thai Style)

Method

  1. Heat a large pot over a medium heat. Add coconut oil, chilli, ginger, shallot, and garlic. Saute for 3-4 minutes, stirring occasionally
  2. Add curry paste and stir to coat. Saute another 2-3 min
  3. Add coconut milk, turmeric, curry powder, salt, and pepper. Stir to combine
  4. Bring to a simmer. Add lentils, soy, and syrup.
  5. Once lentils are tender, taste and adjust flavour as needed (lemon juice for acidity, cayenne for heat, curry powder/paste for curry flavour, salt, syrup…)

Instant pot suggestion is maybe 8 min, which takes about 20 min to pressurise.
