Bring 3 cups of water to boil and add lentils. Allow the pot to boil, then
turn the heat to low and simmer (lid on) for 20 minutes (or until lentils
tender)
Drain lentils
Mince the garlic and finely dice the onion and carrots. Saute onion, garlic,
and carrots in a large skillet with olive oil. Add curry powder and saute for
one minute more
Add cooked and drained lentils to skilled, along with tomato sauce. Stir and
heat through. Salt if needed.
Top with coriander, and serve with rice, naan, or crusty bread.
