Method

  1. put haddock in a large pan with the water. bring to the boil and simmer for 5-10mins until the fish is just cooked. remove fish from the water and flake into large chunks
  2. add the onions and potatoes to the water with plenty of white pepper. the water should cover the vegetables. if not add some milk
  3. cover and cook for 12-15 mins until vegetables are cooked
  4. add the milk and butter and bring to the boil
  5. add flaked fish to the pan and simmer for 3 mins
  6. season to taste
  7. serve with a swirl of fresh cream, some chopped chives and freshly baked bread
